Matcha Plantain Bread with Cardamom-sesame butter Spread

For those of you who seek gluten-free baking recipes that are neither dry nor dense, that is low in sugar and offers a delicious alternative to other breads and recipes that you’ve tried— Give this Recipe a Chance!

This bread uses a gluten-free flour blend AND plantain flour, which I find is a great nutritious addition to any baked goods when going GF. The plantain flour sweetens the dish just slightly and adds a rich source of carbohydrates, nutrients and vitamins that is easily digestible and doesn’t weigh down the bread, keeping it nice and fluffy. My recipe also calls for coconut sugar or palm sugar, which again keeps the sugar serving low (or try swapping out for organic maple syrup—just AVOID white/processed sugars). Adding in the matcha powder adds a grassy, sweet umami taste while being rich in natural antioxidants, specifically called catechins, a class of plant compounds in green tea. Mix in some dark chocolate chips, top with some za’atar spice to round out the savory aspects and you have a delicious new Go-to bread to enjoy with your morning coffee or tea.

But that’s not all! Nothing pairs better with this bread than a spread made from sesame butter (or use almond butter!) with notes of citrusy-floral cardamom, cinnamon, coconut flakes, some honey for sweetness, and fresh aromatic oregano.

Matcha Plantain Bread with Cardamom-sesame butter Spread

Ingredients:

  • 2 eggs
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla
  • 1/3 cup olive oil
  • 1/2 cup hemp milk (or alternative milk)
  • 1/4 cup coconut or palm sugar (or maple syrup)
  • 1/2 cup gluten-free flour blend
  • 3/4 cup plantain flour
  • 1 1/2 tsp. Baking powder
  • 1 1/2 tbsp. Matcha powder
  • 2 tsp. Cardamom, ground
  • Sea salt
  • 1/2 cup chocolate chips (I prefer Lily’s dark chocolate, no added sugar)
  • Za'atar spice
Cardamom-sesame butter Spread
  • 1/4 cup Unsalted Sesame seed butter
  • 1 tsp. Turmeric
  • 1/2 tsp. Cinnamon
  • 2 tsp. Cardamom
  • 2 tsp. Honey
  • 1 tbsp. dried coconut flakes, chopped
  • Sea salt
  • 1 tbsp. Hemp oil
  • 3 sprigs Fresh oregano, chopped

Instructions:

  1. Preheat oven to 365 F. 
  2. Combine wet ingredients: eggs, vinegar, vanilla, olive oil, milk and whisk together. 
  3. Add dry ingredients: coconut sugar, gf flour blend, plantain flour, baking powder, matcha powder, cardamom and sea salt. Mix well. Fold in chocolate chips. 
  4. In a parchment lined bread tin, pour your batter (it will be thick) into your mold. Top with dusting of za'atar spice and Bake for ~35 minutes or until a toothpick check of the center pulls out clean. 
  5. While your bread is baking, combine all ingredients for your spread and mix together. 
  6. Let your bread cool for a few minutes before cutting and eating~ Enjoy!
